Chocolate Strawberry Footballs

"1 1/2 cups dark chocolate chips

12-14 large strawberries

1/4 cup white chocolate chips

you will also need:

2 Coffee mugs

piping bag

#2 tip

Parchment paper

In a microwave safe coffee mug add the dark chocolate chips. I’ve found this to be the best vessel for strawberry dipping. If the bowl you use is too wide then the melted chocolate is too shallow, and it’s hard to get the strawberries dipped.

Microwave on high for 30 seconds. Stir and repeat until melted. Don’t over heat or your chocolate will seize and there is really no coming back from that.

Grab the strawberry by the leaves.

Dip in the chocolate and swirl around carefully until coated.

Hold above the coffee mug for a few seconds to allow the excess to drip off.

Place on a sheet of parchment paper to dry.

Push forward slightly to avoid a pool of dried chocolate forming in the front of your berry.

Allow to dry for about 15 minutes.

In a separate coffee mug (or really, any microwave safe bowl will work for this), add the white chocolate. Microwave on high for 20 seconds and stir, repeat until melted. You have to be even more careful with white chocolate, it tends to seize quicker. It isn’t actually chocolate, its cocoa butter solids so it behaves differently. If it does seize, you can try and add a few drops of canola oil, but you might just need to toss it out and start over.

Pour the white chocolate into your piping bag. Pipe on a stripe at the top and one at the bottom of your strawberries.

Then pipe a line down the middle of the berry.

Then pipe 5 or 6 lines across the middle line.

Tips:

-Let the white chocolate cool a bit, but not harden, before piping. If it’s too hot, it’ll be really runny.

-When piping the lines, double back a bit to avoid the “strings” of white chocolate from dripping down the sides.

-Serve chilled

-Don’t make more that 24 hours in advance, strawberries tend to shrink a bit as they age."

I mentioned that the weekend before Thanksgiving one of my best friends got married in Turks in Caicos. The wedding was amazing. I'm so excited to share some of the details with you.

Inspired by last week's stuffed cookies I decided to use the remaining Oreo's to create Cookies and Cream Rice Krispies Treats.

Ingredients:

6 cups Rice Krispies

1 bag of Marshmallows

1 bag of Double stuffed Oreo's

3 tablespoons butter

Let out that build up tension by mashing your Oreo's in a bag.

Line a baking dish with parchment/wax paper. Sprinkler the crushed Oreo's along the bottom of the pan. Set aside.

In a large pot melt butter over medium low heat.

Add marshmallows stirring continuously until melted.

Add Rice Krispies and the remaining crushed Oreo's.

Place mixture in the baking dish on top of the crushed Oreo "crust".

Flatten and let cool.

Remove from baking dish & cut into squares.

Devour.

My attempts at creating a new recipe are not always successful but this one is muy delicioso.

A repeat recipe for sure.

sunday suppers: oreo/reese's cup stuffed chocolate chip cookies

There have been quite a few posts in the blogosphere these days showcasing Oreo Stuffed Chocolate Chip Cookies. I decided my co-workers birthday was the perfect time to test out the recipe.

Ingredients

1 cup (2 sticks) softened butter
3/4 cup packed light brown sugar
1 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
3 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 cups semi-sweet chocolate chips
1 package Double Stuff Oreo cookies

Directions

Preheat oven to 350 degrees.

Cream butter and sugars together with a mixer until well combined. Beat in eggs and vanilla. In a separate bowl mix the flour, salt and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined. Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie. Take another scoop of dough and place on bottom of Oreo cookie. Seal edges together by pressing and cupping in hand until Oreo cookie is enclosed with dough. Place onto a parchment or silpat lined baking sheet and bake cookies 9-13 minutes or until golden brown. To be honest... I didn't love them.
They get huge points for presentation and style but the Oreo got lost in the cookie. You wouldn't have been able to taste it at all if you didn't use the Double Stuffed Oreo's.

Inspired by these cookies I decided the take my own spin. Insert Dark Chocolate Mini Reese's Cups.

Let's just say HUGE hit. They were devoured in minutes. It was unanimous that these were the hands down favorite of the two. What goes together better than chocolate and peanut butter...?!

Appetizer ~ Baked Brie

Baked Brie

1 round of brie

1 package of Pillsbury crescent rolls

sweet jam of choosing, tonight we used pineapple coconut

slivered almonds, optional

crackers for serving

vegetables for dipping, eg. carrots

fruit for dipping, eg. apples

Preheat oven to 375. Unroll 1 package of Pillsbury crescent rolls and place on a baking dish filling in the seams. Place room temperature Brie in the center of the crescent dough. (You can warm up the brie in the oven for 5-10 minutes if you are worried about the brie melting.) Gently fold the dough around the brie enclosing the corners at the center. Ensure the brie is completely encased in the dough. Bake for 30 minutes or until the crust is golden brown. Remove from the baking dish and place on a serving platter. Dollop 2 generous spoonfuls of the jam onto the top center of the brie. Sprinkle with almonds (or other nuts) if desired. Serve with crackers, fruit and vegetables. Enjoy.

Main Course ~ Ham, Tofurkey, Mashed Potatoes & Roasted Root Vegetables

Roasted Root Vegetables

1 butternut squash, peeled

1 acorn squash, peeled

1 bag frozen cippolini onions

2 fennel bulbs

2 sweet potatoes, peeled

1/3 sup olive oil

1/4 cup balsamic vinegar

sea salt and freshly ground pepper to taste

Preheat oven to 350. Remove the tough core of the fennel bulbs by making a v-shape cut into the bottom of the bulb. Cut vegetables, except the cippolini onions into 1 inch pieces or chunks. In a large bowl toss all ingredients together. Spread in a shallow baking sheet (two if desired) and cook for 1 hour or until tender.

Dessert ~ Pumpkin Bread Pudding

5 cups freshly cooked or canned pumpkin purée

2 whole eggs plus 2 egg yolks

3 cups half-and-half (substituted coconut milk)

1/4 cup packed dark brown sugar

1 1/4 cups granulated sugar

3/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 tablespoon ground cardamom (optional)

3/4 cup plus 1/4 cup heavy whipping cream (substituted coconut milk)

10 cups (2-inch) cubes slightly sweet soft whole wheat or challah bread

In a large bowl, mix pumpkin with eggs and egg yolks, half-and-half, brown sugar, 1/4 cup of the granulated sugar, cinnamon, nutmeg, and cardamom; set aside.

In a small saucepan, combine 2 tablespoons water and remaining 1 cup granulated sugar and heat over high heat. As sugar melts, swirl the pan often to ensure even melting. Do not stir with a spoon because it will slow the melting process and cause uneven browning. Cook for 3 to 4 minutes, or until sugar has a deep caramel color; remove from the heat. Carefully whisk 1/4 cup of the heavy cream into the caramel until well combined, then whisk in remaining 3/4 cup heavy cream. Pour caramel mixture into a 2 1/2-quart oblong casserole dish. Top with half of the bread cubes, then pour half of the pumpkin mixture over the top. Top with remaining bread, then remaining pumpkin mixture, making sure to soak all of the bread. Set aside to let sit for 30 minutes. Meanwhile, preheat the oven to 350°F. Bake for 30 to 45 minutes, or until set.

Appetizer ~ Goat Cheese & Roasted Garlic Fondue with Roasted Artichokes, Vegetables and Bread for Dipping

Goat Cheese and Roasted Garlic Fondue

2 large heads of garlic, plus 1 garlic clove, minced
1 tablespoon extra-virgin olive oil
kosher salt to taste
1 cup heavy cream
11 oz. fresh creamy goat cheese
1 round teaspoon minced fresh herbs, such as rosemary, sage or thyme
freshly ground black pepper to taste
1 french baguette, cut into cubes

Directions
Preheat the oven to 375 degrees. Peel just the outer skin from the upper half of the garlic heads. Arrange the heads root end down in a baking dish just large enough to hold them in a single layer. Add water to reach about 1/4 inch up the sides of the garlic heads and drizzle them with the olive oil. Sprinkle with salt, cover tightly with foil, and roast until the garlic is soft, 35 to 40 minutes. Remove the foil. If all the water has evaporated, add 1 to tablespoons more and continue to roast, uncovered for 5 to 10 minutes. Let stand until cool enough to handle. In a medium saucepan, heat the cream and minced raw garlic over medium heat. Bring to a boil, then reduce the heat to low. Squeeze the roasted garlic cloves out of their skins and into the cream mixture. It will be somewhat lumpy. Whist in the goat chess a little at a time stirring with a fork until smooth. Add the herbs and season with salt and pepper. Serve with the cubed baguette. Use a trivet to protect the table from the fondue pot.

Roasted Artichokes

1 whole artichoke

2 tablespoons of extra virgin olive oil [separated]

1 tablespoon of Greek spice

Dashes of salt and pepper

1 garlic clove

Aluminum foil

Directions

Preheat oven to 425 degrees F. Cut off the stem of the artichoke and about 1 inch of the top. Then carefully chop off the sharp ends of each leaf. Liberally add salt, pepper and Greek spice (I substituted with Jamaican seasoning) to the artichoke. Be sure to rub it into the leaves. Place garlic clove into the center of the artichoke. Pour olive oil onto the inside of the aluminum foil. Carefully wrap up artichoke, sealing the top. Place in a jelly roll pan and bake for about one hour and 15 minutes.

Dinner ~ Pumpkin Soup, Steak & Crab Legs

Pumpkin Soup

3 tablespoons butter

1/8 cup brown sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ginger

1/4 teaspoon black pepper

1 cup chopped onion

2 (14.5 ounce) cans vegetable broth

1 (15 ounce) can pumpkin puree

1 cup heavy whipping cream

Directions

Saute onion in butter in a medium saucepan until tender. Add 1 can chicken broth; stir well. Bring to a boil; cover, reduce heat and simmer 15 minutes. Transfer broth mixture into a blender and process until smooth. Return mixture to saucepan. Add remaining can of broth, pumpkin, ground cinnamon, ground ginger, ground nutmeg, brown sugar and ground pepper; stir well. Bring to a boil; cover, reduce heat and simmer 10 minutes, stirring occasionally. Stir in whipping cream and heat through. Do not boil. Ladle into individual soup bowls.

turks & caicos for my best friend's wedding

Right now this is my view. One of my best friends is about to walk down the aisle with the love of her life in beautiful Turks & Caicos.

The Grace Bay Club hooked us up with a stunning 4 bedroom room and as I sit her sipping rum punch with the best girls in the land I can't picture a better view or setting to get married in.

Congrats Linds & G! In a very short time you will be husband and wife! :)
